Beer is made by creating a liquid rich with fermentable material. This wort is moved to a fermentation vessel where yeast, a living organism, is added. Yeast swims around the fermenter gobbling up the soluble sugar and converting that energy into alcohol. Imagine the feeding frenzy of millions of tiny yeast cells eating their way around a big fermenter. It's a volatile and active environment. During this time, the beer is literally alive. Just prior to packaging, we add a little yeast to the clear beer for a secondary fermentation. This helps to add carbonation, remove oxygen, and prolong shelf life. Live was released in 22oz bottles to test markets in the northeast to great acclaim during autumn of 2012. Twelve ounce bottles are slated for the first quarter of 2013. It will also be available on draught.

Every year at the EBC we brew this beer for our fall festival and the reaction of the public is much the same as it was back in the day. We use only the freshest German Hallatauer hops and Munich malts to produce this Royal brew.

When Phin and Matt sat down to collaborate on their new beer, they knew it had to be different if they were to call it extraordinary. "Let sprinkle it with fairy dust and wave our magic wands," said Phin. "No way," said Matt, "We've got to do better than that. This beer has to be better than any other in the galaxy." "Let's do some market research." So the two strapped on their rocket pack packs and traveled to the intergalactic beer store. After sampling an array of beers from acrossed the galaxy, the duo hit on an idea. "I've got it" exclaimed Matt, "we'll use vast amounts of whole hops, the finest malt, and put a little more love in every batch." "Eureka!" shouted Phin. When Parisi and Stone brewmaster Mitch Steele decided to collaborate, it was essential that they tap a special individual to complete their triad of fermentation domination, and they found just that in Tonya Cornett, the brewmaster at Bend, Oregon's 10 Barrel Brewing Company. Together, they decided on a sturdy yet velvety base of imperial porter and developed a plan to celebrate the bounty of the environs in which it was produced by harvesting avocado honey, jasmine and calendula flowers (some from our very own Stone Farms) and infusing them into the beer to create something complex and uniquely Southern Californian. Consider it craft cross-pollination at its finest.

Description: The base beer is Divine Reserve No. 4, brewer Vince Mandeville's Wee Heavy recipe that won the gold medal at the 2008 World Beer Cup in Strong Scotch Ale category. Here are his tasting notes: The flavors and aromas of the base beer are true to the Divine Reserve No. 4. It is filled with caramel, toffee, dried figs, cocoa and a slight peatiness. Where it deviates is with the roundness of flavors the bourbon barrel contributes. Vanilla, cinnamon and touch of rich earthy pipe tobacco mix with an alcohol warmth that adds to the rich creaminess. The great thing about this beer is that the barrel aging adds to the whole without taking away the character of the original. The warmer this beer gets the better it tastes. We recommend enjoying between 55°F and 60°F.
